Ingredients

  • Fresh or Canned Tomatoes: 4 cups, chopped
  • Cheese Tortellini: 9 ounces (fresh or frozen)
  • Vegetable Broth: 4 cups (low-sodium)
  • Onion: 1 medium, finely chopped
  • Garlic: 3 cloves, minced
  • Fresh Basil or Dried Oregano: 1 tbsp or 1 tsp
  • Olive Oil: 2 tbsp
  • Cream (Optional): ½ cup (for creaminess)

Instructions

  • Sauté Aromatics: Heat olive oil in a large pot. Sauté onions and garlic until translucent (5 minutes).
  • Add Tomatoes & Broth: Stir in tomatoes and vegetable broth, then simmer for 10 minutes.
  • Season & Simmer: Add basil or oregano, salt, and pepper. Simmer for another 10 minutes.
  • Cook Tortellini: Add tortellini and cook until tender (4 minutes). For creamier soup, stir in cream at the end.

Notes

  • Use fresh or canned tomatoes depending on availability.
  • Frozen tortellini works great for convenience.
  • Add a pinch of red pepper flakes for a spicy kick!
