Ingredients
- Fresh or Canned Tomatoes: 4 cups, chopped
- Cheese Tortellini: 9 ounces (fresh or frozen)
- Vegetable Broth: 4 cups (low-sodium)
- Onion: 1 medium, finely chopped
- Garlic: 3 cloves, minced
- Fresh Basil or Dried Oregano: 1 tbsp or 1 tsp
- Olive Oil: 2 tbsp
- Cream (Optional): ½ cup (for creaminess)
Instructions
- Sauté Aromatics: Heat olive oil in a large pot. Sauté onions and garlic until translucent (5 minutes).
- Add Tomatoes & Broth: Stir in tomatoes and vegetable broth, then simmer for 10 minutes.
- Season & Simmer: Add basil or oregano, salt, and pepper. Simmer for another 10 minutes.
- Cook Tortellini: Add tortellini and cook until tender (4 minutes). For creamier soup, stir in cream at the end.
Notes
- Use fresh or canned tomatoes depending on availability.
- Frozen tortellini works great for convenience.
- Add a pinch of red pepper flakes for a spicy kick!
