Ingredients

  • 14 oz smoked sausage (kielbasa or preferred variety)
  • 1 cup long-grain white rice
  • 1 medium bell pepper (any color)
  • 1 medium onion
  • 2 cups chicken broth (low-sodium if preferred)
  • 2 cloves garlic (minced)
  • 1 tsp paprika
  • 1 tsp black pepper
  • Salt to taste

 


Instructions

  1. Sauté the sausage and veggies: Heat 1 tbsp olive oil in a large pot over medium heat. Add the smoked sausage, chopped onion, and diced bell pepper. Cook for 5-7 minutes, stirring occasionally, until everything is golden and fragrant.
  2. Add garlic and spices: Stir in the minced garlic, paprika, black pepper, and a pinch of salt. Cook for 1 minute until fragrant.
  3. Cook the rice: Add the rinsed rice to the pot and stir until coated in the oils. Pour in the chicken broth, bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, until the liquid is absorbed and the rice is tender.
  4. Serve and garnish: Remove from heat and let sit, covered, for 5 minutes. Serve hot, garnished with fresh parsley or green onions, if desired.
