Ingredients

  • Mushrooms: Sliced (8 oz)
  • Olive Oil: Extra virgin (2 tbsp)
  • Garlic: Minced (2 cloves)
  • Chicken Broth: Low-sodium (1 cup)
  • Heavy Cream: (½ cup)
  • Seasonings: Salt, pepper, fresh thyme or Italian seasoning (1 tsp)

Instructions

  1. Prepare Ingredients: Slice mushrooms, season chicken breasts with salt and pepper, and mince garlic.
  2. Sear Chicken: Heat olive oil in a skillet, cook chicken for 5 minutes per side until golden brown. Remove and keep warm.
  3. Sauté Mushrooms: In the same skillet, cook mushrooms and garlic until softened. Add chicken broth and simmer.
  4. Create Sauce: Stir in heavy cream, adjust seasoning, and let the sauce thicken. Return chicken to the skillet, simmer until cooked through (internal temperature: 165°F).
