Description

These Loaded Baked Potato Rounds are a perfect appetizer or side dish packed with cheesy, savory, and creamy flavors. Crispy on the outside and tender on the inside, each bite is a delightful combination of seasoned potatoes, melted cheddar, crispy bacon, and tangy sour cream.

 


Ingredients

  • 4 medium-sized russet potatoes (sliced into 1/2-inch rounds)
  • 3 tbsp olive oil
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked bacon bits
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the potatoes into even rounds (1/2-inch thick) and toss them in a bowl with olive oil, salt, and pepper.
  3. Arrange the rounds on a parchment-lined baking sheet without overlapping.
  4. Bake for 25-30 minutes, flipping halfway, until golden brown and tender.
  5. Remove from the oven and top each round with cheddar cheese and bacon bits. Return to the oven for 5 minutes or until the cheese melts.
  6. Garnish with sour cream and chopped green onions. Serve immediately.

  • For a vegetarian version, skip the bacon and add toppings like diced tomatoes or sautéed mushrooms.
