- 1 cup shredded sharp cheddar cheese

- Salt & pepper (to taste)
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the potatoes into even rounds (1/2-inch thick) and toss them in a bowl with olive oil, salt, and pepper.
- Arrange the rounds on a parchment-lined baking sheet without overlapping.
- Bake for 25-30 minutes, flipping halfway, until golden brown and tender.
- Remove from the oven and top each round with cheddar cheese and bacon bits. Return to the oven for 5 minutes or until the cheese melts.
- Garnish with sour cream and chopped green onions. Serve immediately.
