- 1 cup long-grain white or brown rice (uncooked)
- 1 medium onion, finely chopped
- 1 bell pepper, diced (red or green)
- 1 cup shredded cheddar cheese
- 1 can (15 oz) tomato sauce
- 1 tsp each garlic powder, paprika, salt, and pepper
- 2 cups water or broth
Instructions
- Preheat and Cook Beef:
Preheat oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef and onions until browned (5–7 minutes). Drain excess fat and season with garlic powder, paprika, salt, and pepper. - Add Vegetables:
Stir in diced bell peppers and sauté for 3–4 minutes until softened but still crisp. - Mix with Rice and Sauce:
Add uncooked rice to the skillet and stir well. Pour in tomato sauce and water or broth, mixing thoroughly. - Transfer to Baking Dish:
Pour the mixture into a greased 2-quart baking dish. Cover tightly with aluminum foil. - Bake and Top with Cheese:
Bake for 30 minutes, then remove foil. Sprinkle shredded cheddar cheese on top and bake uncovered for 10–15 minutes until bubbly and golden. - Serve and Enjoy:
Let the casserole rest for 5 minutes before serving.
