Description

This hearty and comforting dish combines savory ground beef, fluffy rice, and flavorful vegetables, all baked to perfection under a golden layer of melted cheese. It’s easy to prepare and perfect for weeknight dinners!


Ingredients

  • 1 lb (450g) lean ground beef
  • 1 cup long-grain white or brown rice (uncooked)
  • 1 medium onion, finely chopped
  • 1 bell pepper, diced (red or green)
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) tomato sauce
  • 1 tsp each garlic powder, paprika, salt, and pepper
  • 2 cups water or broth

Instructions

  1. Preheat and Cook Beef:
    Preheat oven to 350°F (175°C). In a skillet over medium heat, cook the ground beef and onions until browned (5–7 minutes). Drain excess fat and season with garlic powder, paprika, salt, and pepper.
  2. Add Vegetables:
    Stir in diced bell peppers and sauté for 3–4 minutes until softened but still crisp.
  3. Mix with Rice and Sauce:
    Add uncooked rice to the skillet and stir well. Pour in tomato sauce and water or broth, mixing thoroughly.
  4. Transfer to Baking Dish:
    Pour the mixture into a greased 2-quart baking dish. Cover tightly with aluminum foil.
  5. Bake and Top with Cheese:
    Bake for 30 minutes, then remove foil. Sprinkle shredded cheddar cheese on top and bake uncovered for 10–15 minutes until bubbly and golden.
  6. Serve and Enjoy:
    Let the casserole rest for 5 minutes before serving.

Notes

  • For extra flavor, substitute water with beef or chicken broth.
  • Brown rice may require longer cooking time, so adjust liquid and bake time accordingly.
  • Add a sprinkle of fresh parsley for garnish before serving.
