Ingredients

  • Chicken Breasts: Boneless, skinless (1 lb)
  • Olive Oil: Extra virgin (3 tbsp)
  • Lemon Juice: Freshly squeezed (3 tbsp)
  • Garlic: Minced (3 cloves)
  • Dried Oregano: (2 tsp)
  • Salt: (1 tsp)
  • Pepper: (½ tsp)
  • Cherry Tomatoes: Halved (1 cup)
  • Cucumber: Diced (1 cup)
  • Red Onion: Sliced (½ medium)
  • Feta Cheese: Crumbled (½ cup)

Instructions

  1. Marinate Chicken: Mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Marinate chicken in the mixture for at least 30 minutes.
  2. Cook Chicken: Grill or pan-fry chicken on medium-high heat for 6 minutes per side, until the internal temperature reaches 165°F (75°C). Let rest, then slice.
  3. Assemble Bowls: Layer diced cucumber, cherry tomatoes, sliced chicken, and crumbled feta in bowls. Drizzle with remaining marinade. Serve immediately or refrigerate for later.

Notes

  • Serve with a side of pita or quinoa for extra texture.
  • Refrigerate leftovers for up to 2 days.
