Ingredients

  • 1 lb lean ground beef
  • 2 medium russet potatoes, diced
  • 1 cup carrots, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • ½ tsp each salt and black pepper
  • Optional: ½ cup crispy bacon bits

Instructions

  1. Brown the Beef: Cook ground beef in a skillet over medium heat until browned. Add onion and garlic; sauté for 2-3 minutes. Drain excess fat.
  2. Add to Crock Pot: Transfer beef mixture to the slow cooker. Add diced potatoes, carrots, beef broth, salt, and pepper. Stir well.
  3. Cook: Cover and cook on low for 6-8 hours (or high for 4-5 hours).
  4. Add Cream Cheese: In the last 30 minutes, stir in cream cheese until melted and smooth.
  5. Serve: Top with shredded cheddar cheese and optional bacon bits. Enjoy warm!

Notes

  • For a thicker soup, mash some of the potatoes with a fork before adding cream cheese.
  • Add paprika or thyme for extra flavor.
  • Serve with crusty bread or crackers for a complete meal.
