- 1 lb lean ground beef
- 2 medium russet potatoes, diced
- 1 cup carrots, chopped
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- ½ tsp each salt and black pepper
- Optional: ½ cup crispy bacon bits
Instructions
- Brown the Beef: Cook ground beef in a skillet over medium heat until browned. Add onion and garlic; sauté for 2-3 minutes. Drain excess fat.
- Add to Crock Pot: Transfer beef mixture to the slow cooker. Add diced potatoes, carrots, beef broth, salt, and pepper. Stir well.
- Cook: Cover and cook on low for 6-8 hours (or high for 4-5 hours).
- Add Cream Cheese: In the last 30 minutes, stir in cream cheese until melted and smooth.
