Ingredients

  • – 1 kg boneless chicken thighs or breasts
  • – 200 g plain yogurt
  • – 2 medium onions, finely sliced
  • – 6 cloves garlic, minced
  • – 2-inch piece ginger, grated
  • – Whole spices: cumin seeds, coriander seeds, green cardamom pods, black cardamom pod, cloves, cinnamon stick
  • – 2 tbsp Kashmiri red chili powder
  • – 1 tsp garam masala
  • – 4 tbsp cooking oil or ghee
  • – Fresh coriander leaves for garnish

Instructions

1. Marinate chicken in yogurt mixed with half the garlic and ginger paste, chili powder, and salt for at least one hour.

2. Grind whole spices into a fine powder.

3. Sauté onions in oil until golden brown.

4. Add remaining garlic and ginger paste along with ground spices; cook until fragrant.

5. Incorporate marinated chicken; cook for 5 minutes.

6. Add water and simmer for 30 minutes until the sauce thickens.

7. Finish with garam masala and garnish with fresh coriander.


Notes

Experiment with additional vegetables like peas or potatoes for added nutrition or flavor variations. For spicier results, increase the amount of chili powder or include fresh chilies.
