Ingredients

Scale
  • 2 cups all-purpose flour (sifted)
  • 1 cup unsalted butter (softened)
  • 3/4 cup confectioners’ sugar
  • 1/2 cup ground almonds or almond flour
  • 1 tsp pure vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp fine sea salt

Instructions

  • Preheat the Oven: Heat to 350°F (175°C) and line baking sheets with parchment paper.
  • Cream Butter and Sugar: Beat softened butter and confectioners’ sugar until light and fluffy.
  • Mix Dry Ingredients: Combine flour, ground almonds, baking powder, and salt.
  • Combine Mixtures: Gradually mix the dry ingredients into the creamed butter-sugar mixture. Stir in vanilla extract.
  • Shape Dough: Roll into 1-inch balls and place 2 inches apart on the baking sheets.
  • Bake: Bake for 12-15 minutes until edges are golden. Cool on a wire rack before serving.

Notes

  • Avoid Overmixing: Overworking the dough can make the cookies less tender.
  • Customize: Add a dusting of powdered sugar for an elegant finish.
  • Storage: Store in an airtight container for up to one week.
